Stuart Littell and Pamela Marvel are partners in life and in business. When Pamela prepared to make good on a life-long dream –to live in the country as she had growing up on a dairy farm in Wisconsin–. Stuart was a full backer and supporter. Pamela wanted to be an active participant in rural life too, a traditional farmer who grew crops, nurtured the soil and improved the environment. After some deliberation, they decided to look for the ideal place to locate a small olive orchard, where they could produce their own olive oil. In early 2008 they bought a 20 acre farm in Capay Valley. Single Varietal Olive Oil The Picual is an olive cultivar from Spain. Picual olives are the most commonly grown olive today for olive oil production. Picual trees are estimated to account for 25% of all olive oil production in the world. This varietal is very high in oil content, at 20-27% by weight, and is normally high in polyphenols. The oil has a big, green fruit flavor that recalls cut grass, tomato leaf, green herbs, a whiff of pine, and a black pepper finish. Certified by the California Olive Oil Council, who's purpose is to ensure quality, in every bottle they certify. Feel comfortable with its source, as the name of the farm is printed on the label. Have confidence knowing the oil is fresh by checking the harvest date printed on each and every bottle Know exactly which type of olive variety you are getting to have a better idea of flavor profile, when trying it on different foods.
